
Spanish Omelette
This is a fantastic throw-together dish that uses basic ingredients found in the pantry. Feel free to add bacon, mushrooms or anything else in the fridge.
Ingredients
3 eggs per person, whisked
1 potato, peeled and sliced about .5cm thick
1 shallot, finely diced
1 clove garlic, crushed
Knob of good butter
Salt and pepper
Method
Season, sauté and lightly brown the sliced potato in a frying pan with the butter until cooked through (about 5mins).
Place potatoes in a bowl with the whisked eggs.
Sauté shallot and garlic in the same frying pan until aromatic.
Stir onion through egg and potato mixture.
Lightly grease the pan with a little butter and pour in the egg mixture.
Let the egg cook for a few minutes and flip your omelette.
Allow to brown and remove from frying pan.
Serve immediately with salt and pepper.
