Patatas Bravas

This traditional Spanish Tapas dish is perfect as a canape, side or tapas with wine. Serve with Garlic Mint Yoghurt or Aioli.

3 large potatoes (peeled, cut into bite-size chunks)
1 tsp sea salt
1/2 tsp sweet paprika
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
1/4 cup olive oil

Bring a medium saucepan of water to the boil.
Add your potatoes and par boil until just tender.
Pour your potatoes into a strainer and drain the saucepan of water.
Place the pan back on the heat and pour the potatoes into the pan to steam dry for a minute.
While the potatoes are steaming, place your oil, sweet and smoked paprika, remaining salt and cayenne pepper in a baking dish. Stir until ingredients are combined.
Pour your potatoes into the baking dish and toss until well covered.
Place in the oven and allow to cook until crunchy (approximately 20 minutes).
