I love Saturday mornings. PJ’s until noon, Sex and the City marathon on Foxtel and most times a cooked breakfast. This week I decided to bring out my old electric pie maker (awesome piece of equipment… click me) and whip up some puff pastry open pies, using the ingredients in the fridge. I made 2 pies each and they were delicious and fresh.

Open Egg Pie

  • 1 sheet puff pastry
    (cut into 4 circles using cutter provided with pie maker)
  • spray oil
  • 4 eggs
  • 50 grams pancetta
    (diced finely and cooked in a frying pan with butter, until crunchy)
  • 4 slices tasty cheese
  • fresh thyme
  • sea salt and cracked pepper

Method
After preheating the pie maker, I sprayed each of theĀ moulds with a little oil and placed the puff pastry circles inside.
I put a slice of cheese broken up into pieces, onto the base of each pastry case and sprinkled the pancetta over the cheese.
One egg was carefully cracked into each mould and the lid was closed so the pies could cook.
Once the eggs were cooked medium soft, I lifted the pies onto a plate.
The pies were then sprinkled with thyme, sea salt and cracked pepper.
