Mexican Meatloaf

A great family classic with a Mexican twist. The kids will love this one.

Ingredients

  • 500g premium or low fat beef mince
  • 1 medium onion, finely diced
  • handful of fresh coriander
  • 1 egg
  • salt and pepper
  • 1 packet mexican taco seasoning mix
  • spray oil
  • 3 tblsp Roasted Capsicum and Tomato Salsa
  • 3 tblsp tomato sauce

Method

Preheat oven to medium high.
Place beef, bacon, onion, garlic, shallot, coriander, chilli, egg, salt, pepper and mexican seasoning in a bowl and mix well.
Line a baking dish with baking paper and spray with oil.
Form the mince into a freeform loaf and place onto baking paper.
Skewer the loaf with 2 metal skewers (this speeds up cooking time to the centre of the loaf)
Mix the salsa and tomato sauce together and pour over loaf. This will caramelise and act as a glaze.
Place in the oven and cook for 1 hour.
Slice thickly and serve with Guacamole Roasted Capsicum and Tomato Salsa,  Sour Cream and Fresh Garden Salad.

Serving suggestion:
Before forming your mince, roll out the meat to a flat sheet.
Sprinkle a few handfuls of tasty cheese and then roll up and place into the oven.
