This smokey, zesty dish is delicious with any grilled meat.
- 1 bunch fresh asparagus
- 1 bunch baby carrots
- juice of 1 citrus fruit (lemon, lime or orange are great)
- Glug olive oil
- Sea Salt
- Freshly ground pepper
Wash your asparagus and carrots
Bend the base of your asparagus until the woody end snaps off.
Trim the ends of your carrots.
Blanch your carrots for 1 minute in boiling water.
Mix the remainder of the ingredients together and toss with the vegetables.
Allow to marinate for 15 minutes.
Turn your griddle pan or BBQ to high.
Flick a little water into the pan and if it responds loudly, the pan is ready.
Place your vegetables into the griddle pan and allow to cook until grill marks appear.
Turn your vegetables and continue to cook on each side until grill marks cover the carrots and asparagus.
