Ice Cream

Creamy, sweet, completely melt-in-your-mouth. Ice Cream is a year-round favourite that everyone enjoys. I absolutely love icecream and make it whenever I can. However sadly, I do not have an expensive icecream churn so I had to improvise.

My inspiration came from my mother-in-law’s recipe for Christmas Pudding. She makes a gorgeous icecream pudding full of brandy, fruit, nuts and spices and one day I thought I could use the base to suit my own tastes.

The other recipe is actually Donna Hay’s quick caramel icecream recipe. Simple and delicious, I couldn’t resist!

Caramel Ice Cream (Donna Hay’s)

  • 3x tins Nestle Caramel Top ‘n’ Fill
  • 5x containers Thick Double Cream (I use Pura Thick Double Cream)

Stir until well combined.
Freeze for 8 hours or overnight.
Makes 2.5 Litres.

Base Ice Cream

  • 4 egg whites
  • 600ml Carton Whipping Cream
  • 1 1/2 cups of Pure Icing Sugar
  • Liqueur and/or flavourings to taste

Whip egg whites incorporating half the sugar until soft peaks form.
Whip cream with remaining sugar, liqueur and/or flavourings.
Fold egg whites into the cream until combined.
Pour into a container, cover the top with baking paper and seal the lid for freezing.

Freeze for 8 hours or overnight.
Makes 2 Litres.

Important Hints

  • If you choose to stir through a flavouring that does not disolve or change the flavour of the base (ie m&m’s, cookies etc), I would recommend adding a scraped vanilla pod or teaspoon of vanilla bean paste to the base as it can be quite plain.
  • Alcohol does not freeze and this ice-cream recipe made with liqueur will have a perfect consistency when frozen.
  • If you choose to omit the liqueur, you should reduce the freezing time or bring the ice-cream out to thaw 30 minutes before serving.

  • Scraped Vanilla Pod or Vanilla Bean Paste (avoid vanilla essence)
  • Milo
  • Cocoa Powder (I love Bali’s Organic Cocoa Powder)
  • Crushed Oreo Cookies
  • Espresso
  • Chopped chocolate bars
  • Coconut cream
  • Pureed mango
  • Bailey’s
  • Tia Maria
  • Mozart
  • Creme de Menthe
  • Coffee Liqueur

    Delicious! Thanks for the Caramel ice cream we had the priviledge of enjoying immensely!

    That base ice cream is so versatile isn’t it. Can add mixed fruits and nuts and brandy for Christmas pudding too. So delicious!

    I attempted your suggested milo variation and it was divine!!!! The family polished it off in less than a weekend – a great result! My second attempt was using the base recipe and adding a punnet of squashed strawberries which made a great strawberry & cream ice-cream.
