Crunchy Potatoes

Super crunchy potatoes perfect with a roast.

Ingredients
4 Large Ruby Lou or Royal Blue potatoes
1/4 cup Olive Oil
Salt and Pepper taste

Method

Preheat oven to 200 and insert a baking tray with olive oil, salt and pepper.
Peel your potatoes and  roughly chop them into bitesized chunks.
Boil your potatoes until just tender.
Drain potatoes using a strainer and “fluff” them up buy shaking the strainer and allowing the potatoes to break away a little.
Once the oil is hot, toss the potatoes in the tray, put in the oven and allow to crunch up (about 20-30mins).
Serves 2 as a side
