A timeless classic that is rich and full of flavour. Perfect to impress your friends and family at a dinner party.

Prepare your desired steak as per The Perfect Steak instructions.
On a low-medium heat, melt a knob of butter in a small frying pan.
Add half the garlic, a pinch of salt and pepper and allow to cook until aromatic (do not allow to brown or burn).
Add the prawns and cook until flesh has turned white.
Turn the prawns over and allow to cook until the other side has turned white.
Be careful not to over cook – should take less than 3 minutes.
Set aside on a paper towel.
In a very small bowl, mix the corn flour and a splash of cream and white wine with a fork.
You need about 30mls of this mixture (shot glass).
Increase the heat of the frying pan to medium-high and add an additional knob of butter.
Once melted add the remaining garlic and a little more salt and pepper.
Cook until aromatic and add the remaining white wine, cream and cornflour mixture.
Bring to a light boil and allow to thicken and reduce by half, while constantly stirring.
Once ready, remove from the heat.
Plate your steak, with slices of avocado and prawns sitting ontop.
Pour the sauce over your prepared steak and serve with Chunky Chips and Baby Leaf Salad.
