This dish is a cheap, easy, last minute salad to serve at a BBQ or alongside a grilled salmon fillet.
- 2 tins beetroot (wedges or cubed)
- 4 tablespoons mayonnaise
- 1 handful dill
- 1/4 cup finely diced red onion
- ** Optional: 3 hard boiled eggs (quartered)
Mix ingredients together and chill before serving.
