Chargrilled Capsicum and Field Mushroom Stack

Smokey and sweet, this gorgeous vegetable steak is delicious on its own or atop a Perfect Steak.

Ingredients

  • 1 large red capsicum or 2 paprika
  • 2 field mushrooms
  • salt and pepper
  • olive oil

Method
Slice your capsicum or paprika away from the membrane and core of the vegetable.
Ensure you have thick “slabs” rather than slices.
Trim the stem of the mushrooms and peel the skin away.
Brush the vegetables with olive oil.
Preheat your griddle pan to very hot.
Flick a little water into the pan and if it makes a lot of noise, the pan is ready.
Dry fry your vegetables on one side until char marks appear.
Turn vegetables over and continue to cook in the same fashion.
Serve vegetables alternating in a stack with a sprinkle of sea salt and pepper.

  2. Glad you like it Mary :) Perhaps try with with a splash of balsamic vinegar and/or olive oil to add depth of flavour.
