This delicious salad boasts simple, elegant ingredients. Perfect for a BBQ, Italian dinner party or a quick lunch.
- 2 ripe Roma tomatoes (ripe and stored at room temperature – never the fridge)
- handful basil – fresh, washed and torn
- 5-6 large bocconcini
Thickly slice your tomato and bocconcini to 1-1.5cm slices.
Place each slice flat on a plate, with no overlaps.
Sprinkle a little sea salt over the plate and generously grind pepper over the top.
Drizzle extra virgin olive oil over your cheese and tomato.
When ready to serve, alternate slices and overlap the edges.
Sprink a little basil over the salad and serve immediately.
